Are you interested in a quick, easy and AMAZING cupcake recipe? If you are and you like mint this is the cupcake for you.
I started with the same recipe I used for my Thin Mint Cookie Cupcake. You’re going to make the batter the same way (if you’re not making all of your cupcakes this way you need to start, I seriously cannot believe the difference in the moistness and the fluffiness of the cupcakes, it’s amazing).
In my oven this recipe takes exactly 15 minutes to cook (just so you know the overall time I am dealing with).
Once I had my batter ready I used my medium pampered chef scoop and filled each of my cupcake liners 3/4 full.
I had my oven preheated to 350*.
I put the cupcakes in the oven and cooked them for 5 minutes. Once the timer went off I opened the oven and put one Hershey Mint Truffle Chocolate Kiss in each cupcake. I pushed it down but did not push it all the way to the bottom, just basically so the top was about even with the batter (as per the picture below).
I then baked them for the rest of the time (in my oven another 10 minutes).
I pulled them out of the oven and let them cool on a cooling rack.
The awesome thing about dropping the kiss in while there is still time left to cook is that it doesn’t sink to the bottom and even though the chocolate fully melts and the mint doesn’t the flavor of the mint ends up throughout the enter cupcake. SOOO yummy.
Once they were cooled I frosted them with my chocolate frosting.
To make the chocolate frosting I grabbed a tub of milk chocolate creamy frosting and had it ready. I then took 20 mint truffle kisses and put them in a microwave safe glass bowl and melted them. To melt them I warmed them for 10 seconds and then stirred them. I did this about 4 times, the last time I took them out they still looked kind of solid but once I started stirring they melted down the rest of the way (the warmth of the bowl helps this).
I then added my tub of milk chocolate frosting to the melted kisses into the warm bowl and mixed them all together. Again the warmth of the bowl helped this be easy. You can add more or less kisses if you want, this gave it just a little bit of a mint flavor and mixed with the mint flavor of the cupcake I think it was plenty.
They were a HUGE hit tonight at the birthday party. They were so simple and tasted so good. I added a few green sprinkles for the birthday boy and he loved them.
