I was introduced to these White Chocolate Cranberry Shortbread cookies a few years ago at my daughter’s piano recital. Their piano teacher and her daughters made cookie plates with different Christmas cookies for each piano student to take home. I remember that night while biting into these cookies being pleasantly surprised. I don’t know why but I wasn’t expecting it to taste like a shortbread cookie at all. I’m usually not a fan of white chocolate but with the cranberries it was a perfect match and I was instantly wishing there were more than two of those cookies on the plate. I immediately asked their piano teacher Katie for the recipe and she said they were one of their favorite cookie’s at their house. They are also a favorite at our house and have also become a sweet reminder of their piano teacher that sadly passed away from cancer last summer so we now call them “Katie’s cookies”.
1 c. Powdered Sugar
1 1/4 softened butter
2 1/4 c. flour
1 c. dried cranberries
1 c. white chocolate chips ( I used Ghiradelli)
- Preheat oven to 325 F
- Cream together the butter (softened) and powdered sugar until light and fluffy.
- Slowly add flour, beat well. Dough will be a bit crumbly looking.
- Stir in cranberries and white chocolate chips.
- Gather dough into small balls, using a scoop for guidance.
- Put dough onto baking sheet and press down slightly.
Bake for 14 minutes. Once the cookies are out of the oven keep the cookies on the cookie sheet to cook a few more minutes. Remove onto cooling racks once they are cool. Melt white chocolate chips in the microwave in increments of 20 seconds. Once melted drizzle with a spoon over the cookie. ( this is optional, they still taste great without it).
