It’s hard to believe we are half way through May already and Summer will be here in just a few short weeks. It seems like it’s a busy time of year for a lot of families right now , with school ending, spring sports and dance recitals and the list goes on. Since my kids started playing softball and baseball we are finding out that these activities can take up a lot of our time in the evenings, most of the games are played during dinner time and some nights we don’t get home until after 8:00. If I haven’t planned out anything for dinner that night we end up buying something and eating it at the field or running through a drive-thru on the way home. These Root Beer Pulled Pork Sandwiches are the perfect dinner idea for those busy nights when you are running everyone around like crazy and the last thing you have on your mind is dinner. The thing that I love about this recipe is that it only takes 3 ingredients, basically you dump everything in your slow cooker in the morning and go about your day, and by dinner time you will have a delicious pork that will shred like butter and taste amazing! And the best part about these sandwiches is your family can take them on the go!
1 boneless pork shoulder roast 2-3 lbs.
1 bottle of barbecue sauce of your choice ( We use Sweet Baby Ray’s Original)
1 12. oz can of Root Beer ( We like A&W)
1.Place your meat in your slow cooker and salt and pepper the meat to taste. Pour root beer over the roast. Cook on low for 8-10 hours. You want to cook pork on low and slow.
2. Remove the roast from the slow cooker and cool slightly and discard any juice.
3. Shred the pork with a fork and return to the slow cooker. Stir in barbecue sauce and cook until heated through. Add enough sauce so the pork isn’t dry. ( You can always add more to the pork later when eating)
Serve on rolls.( We like to add slices of provolone cheese)
This recipe is also great for feeding large crowds. We served it after my little boy’s baptism last month and there was plenty of food for everyone, and we still had leftovers! For how little time it takes to prepare this pulled pork, you can make some really great dinners with the leftovers, like pork nachos, pork salad or burritos. I know with summer coming up I’m always looking for recipes I can make without turning my oven on and making my house hot.
