So I am part of a food challenge and the ingredient we are supposed to use is potatoes. I was excited to do the challenge but also a little worried because I was thinking “what am I going to do with potatoes that isn’t the same old, same old?” Luckily my husband came to the rescue and described to me, a mozzarella stick wrapped in mashed potatoes, breaded and fried. I immediately loved the idea of Mashed Potato Mozzarella Sticks!
These bad boys are perfect if you have left over mashed potatoes after a holiday or family dinner. They are easy to put together and can be an appetizer or just a snack! Here is all you need…
Mashed Potato Mozzarella Sticks
2 cups mashed potatoes, cold
(I added chives, and seasoned my potatoes with salt, pepper, and granulated garlic.)
4 oz mozzarella cut into sticks
1 cup panko bread crumbs
1 cup flour
1 – 2 eggs, whisked
oil for frying
Take a small ball of mashed potatoes, flatten them slightly in your hand. Press the mozzarella stick into the potatoes and cover the whole mozzarella stick. Make sure your mashed potatoes are cold, they are SO much easier to work with. You don’t want too much of the mashed potatoes because it will take longer to fry and the cheese won’t be melty goodness! I rolled it between my hands to make it more uniform, and make the potatoes even all around. Roll your potato stick in the flower, then in the egg, then in the panko. I pressed down slightly into the panko to make sure it stuck well. Heat your oil on medium high and then reduce to medium. Drop your potato sticks into the oil, turn if your oil doesn’t completely cover your potato stick. Fry for 2-3 minutes until golden brown. Drain on paper towels, serve hot with ranch dressing and enjoy!
These are so delicious and pretty filling too! I’m really excited to experiment with other cheeses, and adding ham, bacon, and other fun stuff into the mix!
