My kids love donuts. They honestly think they are pretty much the best thing ever. Every Saturday morning, my kids ask if I’m going to go get them donuts. Sometimes I do, because let’s be honest it’s pretty easy to just go to the store and pick up a dozen donuts! But sometimes I make them! It’s super easy and fun, so I decided to make Jelly Filled Donuts!
You may remember when I posted about making donuts from biscuit dough. I thought, I could probably use the same thing but make them filled instead! I had some delicious blueberry filling, but you can use any kind of filling, jam, or jelly! My next try will be for Boston Creme filled…those are my very favorite!
Easy Jelly Filled Donuts
1 can jumbo buttermilk biscuits
1 cup filling of your choice
vegetable oil for frying
1 can of vanilla frosting, melted
Heat your oil on medium, make sure your oil isn’t too hot or the outside will cook quickly and the inside will be raw. You are going to want it at least 2-3 inches deep in your pan. Carefully place your biscuits in the oil (my pan was smaller and I could only fit 2 at a time) and let them fry on one side for about 60-90 seconds, then flip. You’ll want the outside golden brown. Transfer to a cookie sheet lined with paper towels to drain the oil. Let cool. using a cupcake filling tip (I use the Wilton 230) poke the tip into the donut and fill using a back and forth motion. You want the jelly to get all the way inside the donut. Set filled donuts on a cooling rack set on top of the cookie sheet. Put your frosting in a microwave safe bowl and heat for 30 seconds. Stir well and then heat for another 20 seconds and stir again. Your frosting should be pour-able but still on the thicker side. Pour frosting over the top of the filled donuts. Let set for 2-3 minutes, serve and enjoy!
