There’s just something about Fall and candy corn…they go hand in hand! So I decided to make some yummy cookies with one of our favorite treats in them.
Caramel Candy Corn Cookies

1 3/4 cups flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar, packed
3/4 teaspoon vanilla
6 caramels, chopped into very small pieces
1/3 cup candy corn, roughly chopped
Preheat oven to 375°F. Combine flour, baking soda, salt, cinnamon, and nutmeg into a small bowl. In mixing bowl cream butter until it’s smooth and fluffy. Add sugar, brown sugar, and vanilla. Add egg, mix until well combined. Mix on low and slowly add in flour mixture. Mix until just combined. Stir in caramel and candy corn pieces.
Scoop onto parchment lined cookie sheet, I used a mounded 1 ounce scoop. Bake for 8-10 minutes. Make sure you don’t over bake…or else your candies will melt out of the cookie. Cool on cookie sheet for a few minutes and then cool on a rack. Enjoy!
