When the weather starts getting nicer, the first thing I want to do is start barbecuing. However, both of my grills are currently out of commission. 🙁 Luckily I was able to use my broiler to get a similar effect! I found a recipe from The Girl Who Ate Everything for Hawaiian Grilled Chicken. It looked SUPER delicious so I changed it up a little for my family and was really excited with how yummy it turned out!
Hawaiian BBQ Chicken
(Recipe Adapted from The Girl Who Ate Everything)
3lbs boneless, skinless chicken, I used a combo of thighs and breasts
1/2 cup low sodium soy sauce
1/2 cup water
1/2 cup teriyaki sauce
1/2 cup pineapple juice
1 teaspoon granulated garlic
1/2 bunch green onions, chopped (a couple tablespoons saved for garnish)
1 cup lightly packed brown sugar
1 teaspoon olive oil
1 (13.5 oz) can coconut milk
1/8 cup pineapple, chopped for garnish
Directions
Trim any fat from chicken pieces, set in large, shallow dish. Whisk together all ingredients but garnishes. Pour over chicken and marinade for 8 hours or overnight. The marinade time is VERY important, it lets the chicken soak up all the delicious flavors. Now if you have a working grill, grill the chicken over low head so you don’t burn the marinade. About 6 mins each side, until chicken is cooked through. Don’t over cook! If you don’t have a grill, lower your oven rack to the second lowest level and set chicken on a broiler pan. Broil on low for 8-10 minutes each side. Keep an eye on it…don’t let it burn. Serve over rice and garnish with pineapple and green onions. Enjoy!
