Easy Indoor Barbecue Ribs

One of the best things about summer is barbecuing...one of the worst things about winter is wanting barbecue but it being WAY too cold to stand outside and use the grill!  We've got lots of snow on the ground here so you definitely won't see me outside cooking.  But that's okay cause you can make delicious Barbecue Ribs indoors!


What you will need is...

Boneless, country style pork ribs (I usually plan on one per child and two per adult)
1 bottle of your favorite barbecue sauce (or a great homemade recipe)
3 tablespoons of soy sauce

First, boil your ribs until done.  I fill my stock pot 2/3 full of water and add the soy sauce.  Use a meat thermometer to check internal temperature.
Next set your oven to a high broil, leaving the rack in the middle of the oven.  Drain ribs and set on broiling pan.  
Brush your favorite barbecue sauce on each side of the rib.  Here is the homemade recipe I like to use...

1 cup of ketchup
1/4 cup of brown sugar, packed
1/4 teaspoon of chili powder (you can add more if you like a spicier sauce)
Heat in a sauce pan on medium until blended and smooth.

Set your broiling pan in the oven and let each side broil for about 3-4 minutes.  I continue to brush on sauce after I turn the ribs each time.
Serve with your favorite sides.  We love ours with Rice a Roni and steamed veggies!  Enjoy!
