There is no excuse for my lateness in Visiting Teaching this month but I wanted to share with you what I did anyway.
I didn’t get scheduled appointments made so instead I made them up a little treat and wrote them each a note.
These are the cards I made for card swap this month. I made a few extra which ended up being good for me.
Inside I wrote a personal note and included this quote from President Monson:
“The needs of others are ever present and each of us can help someone to do something… Unless we lose ourselves in service to others, there is little purpose to our own lives.”
I made mini loaves of zucchini bread and mini pumpkin chocolate chip muffins to include with the note. I love fall baking!
I’m home from church today with a couple of the little ones who had fevers so I’ll be dropping these off as soon as the rest of the family gets back home.
Here are the recipes for the baking I did:
Mini Pumpkin Spice Chocolate Chip Muffins
Preheat oven to 350 degrees
1 box Spice Cake
1 15oz can pumpkin (not pumpkin pie)
1/2 cup water
chocolate chips to your liking (I added only maybe 1/4 of a bag)
Mix the dry cake mix with the pumpkin, chocolate chips and water.
Scoop into a well greased (I used cooking spray) mini muffin pan and bake approx. 10 minutes or until toothpick comes out clean.
Most awesome thing about this recipe (aside from the insane ease of it) is that I figured out how many calories each muffin had based on how many I made and each one is only about 20 calories!
Applesauce Zucchini Bread
(my friend Shelly gave me this recipe)
Preheat oven to 325 degrees
2 eggs, beaten
2 cups sugar
1 cup applesauce
1 tsp vanilla
1 tsp salt
1 tsp baking powder
1 tsp baking soda
3 cups flour
1/2 cup nuts (optional)
2 cups grated zucchini
Mix all ingredients well and pour into a greased loaf pan. Makes 2 loaves. Bake for approx. 1 hour or until toothpick comes out clean.
I really like to sprinkle the pan with cinnamon and sugar after I grease it and add a little cinnamon and sugar to the top of the mix before I bake.
